Turkey and Pesto Panini

  1. Split the focaccia rolls in half horizontally and spread pesto on the cut sides.
  2. Place the bottom half of each roll, pesto side up, on your work surface.
  3. Split up topping between both sandwiches and layer them on top of the bottom bread pieces.
  4. Top with the other bread pieces.
  5. Heat a grill pan over medium heat and spray with cooking spray.
  6. Add sandwiches onto the hot grill pan and place a large heavy pan on top of the sandwiches to press them down (a Dutch oven is perfect).
  7. Cook for several minutes on the first side, until nicely browned.
  8. Flip them over and repeat to brown the other side.
  9. Serve hot!
