Tomato and Macaroni Casserole
- 3 medium tomatoes, sliced
- 4 slices bacon
- 1 cup elbow macaroni
- 3 tablespoons butter
- 3 tablespoons flour
- 1 12 teaspoons salt
- 18 teaspoon pepper
- 2 cups milk
- 2 34 cups shredded cheese
- paprika (to garnish)
- Cook bacon crisp.
- Cool and drain.
- Cook macaroni and drain.
- In a saucepan, melt butter.
- Add flour, salt, and pepper; remove from heat.
- Gradually add milk.
- Return to heat and cook, stirring, until mixture thickens.
- Add 2 cups shredded cheese; stir to melt.
- Add bacon.
- Spread half the macaroni in casserole.
- Top with half of tomato slices and half the cheese sauce.
- Repeat layer.
- Top with paprika and bake at 350 degrees F for 30 minutes.
