Ghirardelli Bittersweet Chocolate Cheesecake

  1. Crust: Mix in food processor.
  2. Press into 13-inch springform pan.
  3. Set aside.
  4. Cheesecake: Melt chocolate in double boiler, stirring frequently.
  5. Set aside.
  6. Beat cream cheese with hand mixer until smooth.
  7. Gradually add sugar.
  8. Beat until smooth.
  9. Add one egg at a time, beating after each egg.
  10. Fold in sour cream, melted chocolate, ground chocolate, vanilla and Bailey's.
  11. Stir until even consistency.
  12. Pour into crust.
  13. Bake at 350F until set, approximately 2 hours.
  14. Chill thoroughly.
