Honeydew Melon Soup with Ice Wine

  1. Scoop out melon flesh, preserving the rind to use as serving bowls.
  2. In a blender, puree melon, lime juice and mint.
  3. Strain puree through a fine strainer and discard solids.
  4. Add optional ice wine, if desired.
  5. Chill for a minimum of 1 hour.
  6. Serve in hollowed out melon halves.
