Chicken & Mayo on a Bed of steamed butternut

• 1 slice of butternuts - steamed
• 1 roasted chicken - left overs & cut into cubes
• 1 mayonnaise
• 1 red onion thinly chopped & a few slices for garnish
• 1 cherry tomatoes cut in half
• 1 full olives - no seeds
• 1 hand full of chopped spring onion for garnish

1. Add mayonnaise & onion to chopped chicken.
2. Place on a bed of butternut and garnish with spring onion; red onion; cherry tomato; olive and a dash of black pepper.
