Tex Mex Black-Eyed Pea Salsa
- 1 (15 ounce) canof seasoned black-eyed peas
- 1 tablespoon diced jalapeno pepper (fresh or jar)
- 14 cup diced red pepper (I used roasted red peppers in a jar)
- 14 cup chopped green onion
- 1 teaspoon minced garlic
- 14 teaspoon cumin
- 14 teaspoon black pepper
- 1 teaspoon lime juice
- 2 tablespoons chopped fresh cilantro
- 23 cup chunky salsa
- Drain blackeye peas in a colander.
- Combine the peas with all othe other ingredients.
- Mix gently.
- Cover and refrigerate 2 to 4 hours.
- Stir before serving.
- Serve with tortilla chips, vegetables or crackers.
