Tex Mex Black-Eyed Pea Salsa

  1. Drain blackeye peas in a colander.
  2. Combine the peas with all othe other ingredients.
  3. Mix gently.
  4. Cover and refrigerate 2 to 4 hours.
  5. Stir before serving.
  6. Serve with tortilla chips, vegetables or crackers.
