Luscious Pumpkin Pie Recipe
- Pastry for one 9 inch pie - use your favorite recipe
- 16 ounce. can pumpkin
- 8 ounce. pkg. cream cheese, softened and cut into pcs
- 3/4 c. packed brown sugar
- 2 lg. Large eggs
- 1 1/2 tbsp. flour
- 1 teaspoon allspice
- 1/2 teaspoon ginger
- 1/2 c. whipping cream
- 2 teaspoon vanilla extract
- Prepare pastry.
- Fit the pastry into 9 x 1 3/4 inch pie pan.
- Crimp edges.
- Preheat oven to 425 degrees.
- In a bowl, combine pumpkin, cream cheese, brown sugar and Large eggs.
- Beat with a mixer till well blended.
- Add in flour and spices, then cream and vanilla.
- Beat till thoroughly blended.
- Pour pumpkin mix into the pastry lined pie pan.
- Bake for 15 min at 425 degrees, then lower heat to 350 degrees.
- Continue to bake an additional 30 min or possibly till set.
- Let cold on a rack.
- Serve pie hot or possibly chilled.
- Makes one 9 inch pie.
