Provencal Green Beans and Potatoes Stew
- 14 cup extra virgin olive oil
- 1 large sweet onion, diced
- 3 garlic cloves, minced
- 2 teaspoons fresh rosemary, chopped
- 1 (14 ounce) canpetite diced tomatoes
- 1 lb frozen cut green beans
- 23 lb golden potato, peeled and diced (1/2 inch)
- 1 teaspoon salt
- 14 teaspoon fresh ground black pepper
- 12 teaspoon herbes de provence
- Heat oil over medium-high heat, add onions & salt.
- Cook until starting to brown (15-18 minutes).
- Add garlic, herbes de provence, salt and pepper.
- Cook for 1 minute.
- Add tomatoes, green beans and potatoes.
- Cover and bring to a simmer.
- Simmer gently until veggies are soft, 25-30 minutes.
