Classic Pumpkin-Date Loaf
- 1-1/2 cups 100% wheat bran high fibre cereal
- 1/2 cup chopped dates
- 1/3 cup non-hydrogenated margarine
- 3/4 cup boiling water
- 1 egg
- 398 mL (1/2 of 28-oz./796-mL can) pumpkin
- 2 cups flour
- 1/2 cup sugar
- 1 Tbsp. Magic Baking Powder
- 2 tsp. ground cinnamon
- 2 tsp. ground ginger
- 1 tsp. baking soda
- 1/2 tsp. salt
- Preheat oven to 350F.
- Place cereal, dates and margarine in medium bowl.
- Add boiling water; stir until margarine is melted and mixture is well blended.
- Cool.
- Add egg and pumpkin; mix well.
- Mix remaining ingredients in large bowl.
- Add cereal mixture; stir just until moistened.
- (Batter will be thick.)
- Pour into greased 9x5-inch loaf pan.
- Bake 55 min.
- or until wooden toothpick inserted in centre comes out clean.
- Cool in pan 10 min.
- ; remove from pan to wire rack.
- Cool completely.
