Warm Zucchini Salad - Diabetic Friendly

  1. Mix lemon juice and crushed garlic together.
  2. Add oil and whisk thoroughly.
  3. Add chickpeas, salt, and pepper.
  4. Slice zucchini into 1/2-inch rounds.
  5. Blanch zucchini by bringing a pot half filled with water to a boil and add zucchini.
  6. Let water come back to a boil and simmer for 1 to 2 minutes.
  7. Drain and toss in dressing.
  8. Serve on a bed of lettuce leaves.
  9. Top with feta cheese and parsley,if desired.
