Yellow Rice and Chicken
- 1 onion, minced
- 3 garlic cloves, minced
- 12 green pepper, minced
- 1 cup rice
- 2 cups canned chicken broth
- 1 (1/4 ounce) package sazon con azafran seasoning, from a 1 . 41 ounce box (purchase in the Spanish or Mexican section of your local supermarket)
- 4 ounces tomato sauce
- 2 -3 tablespoons oil
- 1 whole chicken breast, cubed (Breast can be cut in half and left whole if that is your preference. )
- 1 teaspoon salt
- 14 teaspoon pepper
- Saute onion, garlic, and green pepper in oil until soft.
- Add salt and pepper and tomato sauce.
- Cook an additional 3-5 minutes.
- Add chicken and saute until no longer pink.
- Add rice and broth.
- Bring to a boil, stir, cover and lower heat to simmer.
- Cook 25-30 minutes on top of the stove or put in a 325-350 degree pre-heated oven.
- I prefer to bake the rice in the oven.
- Top with a small can of drained peas, if desired.
