Yellow Rice and Chicken

  1. Saute onion, garlic, and green pepper in oil until soft.
  2. Add salt and pepper and tomato sauce.
  3. Cook an additional 3-5 minutes.
  4. Add chicken and saute until no longer pink.
  5. Add rice and broth.
  6. Bring to a boil, stir, cover and lower heat to simmer.
  7. Cook 25-30 minutes on top of the stove or put in a 325-350 degree pre-heated oven.
  8. I prefer to bake the rice in the oven.
  9. Top with a small can of drained peas, if desired.
