Strawberry-Rhubarb Jam

  1. Stem and thoroughly wash strawberries.
  2. Crush, 1 layer at a time, about 1 pint strawberries.
  3. Measure 1 cup into large bowl or pan.
  4. Cut about 1 pound rhubarb into 2-inch pieces and grind or finely chop.
  5. Measure 1 cup; add to strawberries.
  6. Thoroughly mix sugar into fruit; let stand 10 minutes.
  7. Mix water and fruit pectin in small saucepan.
  8. Bring to a full boil and boil 1 minute, stirring constantly.
  9. Stir in fruit.
  10. Continue stirring 3 minutes.
  11. (A few sugar crystals will remain.)
  12. Ladle quickly into scalded containers, filling to within 1/2 inch of tops.
  13. Cover at once with tight lids.
