Chicken Enchilada's Recipe
- 12 med. flour tortillas
- Salad oil
- 1 can enchilada sauce
- 2 lg. onions
- 8 ounce. cream cheese
- Shredded Jack cheese
- 1 pt. whipping cream
- 2 c. cooked chicken (approx. 1 1/2 pound boneless)
- Saute/fry onions in frying pan and add in cooked chicken.
- Remove from heat and add in cream cheese, salt and pepper.
- Heat salad oil and fry tortillas on both sides and dip in enchilada sauce and filling and roll up.
- Lay seam side down in cake pan; sprinkle with cheese and pour whipping cream over all.
- Bake at 375 degrees uncovered for 20 min.
