Spinach Potato & Tarako Stir-fry
- 1 bunch Spinach
- 3 small Potatoes
- 1 * Salt and pepper
- 1/2 to 1 tablespoon Tarako (salt-cured cod roe)
- 1 1/2 tbsp *Mayonnaise
- 1/2 tbsp *Ponzu
- Wash the spinach and quickly cook in boiling water.
- Drain and squeeze out excess water (once it's cooled).
- Cut into 5 cm lengths.
- Cut the potatoes into large bite-sized pieces.
- Place in a heat-resistant container and cover in cling film.
- Microwave for about 5 minutes.
- Be careful not to burn yourself!!
- Sprinkle lightly with salt and pepper.
- Heat mayonnaise in a pan over medium heat.
- Once the mayonnaise has melted, add the potatoes and cook until they brown a bit.
- Add in the spinach from Step 1 and fry.
- Add in the tarako, mix and fry.
- Finally, add the ponzu sauce directly to the pan and swirl it around.
- Quickly mix and remove from heat once cooked.
- All done!
