Peanut Butter and Jam Sandwich Cookies

  1. Beat butter, peanut butter and sugars in large bowl with mixer until light and fluffy.
  2. Add egg; mix well.
  3. Gradually beat in combined flour and baking powder.
  4. Refrigerate 1 hour.
  5. Heat oven to 350 degrees F. Roll dough to 1/4-inch thickness on floured surface.
  6. Cut into 56 cookies, using teddy bear cutter.
  7. Place, 2 inches apart, on greased baking sheets.
  8. Bake 10 to 12 min.
  9. or until lightly browned.
  10. Cool on baking sheets 1 min.
  11. Remove to wire racks; cool completely.
  12. Spread 1/2 tsp.
  13. jam onto each of 28 cookies; cover with remaining cookies.
