RICE KRISPIES TREATS Mini Cupcakes

  1. Microwave 3 Tbsp.
  2. butter in large microwaveable bowl on HIGH 45 sec.
  3. or until melted.
  4. Add marshmallows; toss to evenly coat.
  5. Microwave 1-1/2 min.
  6. or until marshmallows are completely melted and mixture is well blended, stirring after 45 sec.
  7. Add cereal; mix well.
  8. Press cereal mixture into 36 mini muffin pan cups sprayed with cooking spray, adding about 1-1/2 Tbsp.
  9. cereal mixture to each; cool completely.
  10. Beat cream cheese, vanilla and remaining butter in medium bowl with mixer until blended.
  11. Gradually add sugar, mixing well after each addition.
  12. Add food coloring; mix well.
  13. Remove "cupcakes" from muffin cups.
  14. Frost with cream cheese mixture.
  15. Garnish with sprinkles.
