Avocado, Pepper and Corn Quesadillas
- 1 red pepper, seeded, quartered
- 1 cup Cracker Barrel Shredded Old Cheddar Cheese, divided
- 4 large flour tortillas
- 1 cup frozen corn
- 1 avocado, cut into thin slices
- 1/2 cup chopped fresh cilantro
- 1/4 cup light sour cream
- 1/4 cup Kraft BBQ Ranch Dressing
- Heat barbecue to medium heat.
- Grill peppers 3 min.
- on each side or until crisp-tender.
- Remove from barbecue; cut into 1/2-inch chunks.
- Reduce barbecue to low heat.
- Sprinkle 2 Tbsp.
- cheese onto half of each tortilla.
- Top with peppers, corn, avocados, cilantro and remaining cheese.
- Fold tortillas in half; press tops to flatten slightly.
- Grill 2 to 3 min.
- on each side or until cheese is melted and quesadillas are lightly browned on both sides.
- Mix sour cream and dressing until blended.
- Serve with quesadillas.
