Avocado, Pepper and Corn Quesadillas

  1. Heat barbecue to medium heat.
  2. Grill peppers 3 min.
  3. on each side or until crisp-tender.
  4. Remove from barbecue; cut into 1/2-inch chunks.
  5. Reduce barbecue to low heat.
  6. Sprinkle 2 Tbsp.
  7. cheese onto half of each tortilla.
  8. Top with peppers, corn, avocados, cilantro and remaining cheese.
  9. Fold tortillas in half; press tops to flatten slightly.
  10. Grill 2 to 3 min.
  11. on each side or until cheese is melted and quesadillas are lightly browned on both sides.
  12. Mix sour cream and dressing until blended.
  13. Serve with quesadillas.
