Apple Vinegar Biscuit Cobbler Recipe
- 8 x Granny Smith apples peeled, and cut into wedges
- 2 c. sugar
- 1 pkt cream cheese - (3 ounce)
- 1/3 c. butter or possibly margarine cut up
- 2 1/2 c. self-rising flour
- 1 c. lowfat milk
- 1/4 c. butter or possibly margarine
- 1/3 c. cider vinegar
- 1 tsp grated lemon rind
- 1 tsp grnd cinnamon
- 1 tsp grnd allspice
- 1/4 tsp grnd cloves Vanilla ice cream (optional)
- Combine apple and sugar; set aside.
- Cut cream cheese and 1/3 c. butter into flour with a fork or possibly pastry blender till crumbly; stir in lowfat milk.
- Turn dough out onto a lightly floured surface; knead 3 to 4 times.
- Pat or possibly roll dough to 1/2-inch thickness.
- Cut with a 2 1/2-inch round cutter; set aside.
- Heat 1/4 c. butter in a large skillet over medium-high heat; add in apple mix.
- Cook, stirring often, 20 min or possibly till apple is tender and syrup thickens slightly.
- Stir in remaining ingredients.
- Pour into a lightly greased 11- by 7-inch baking dish; place dish on an aluminum foil-lined baking sheet.
- Arrange 12 biscuits over warm mix.
- Place remaining biscuits on a baking sheet.
- Bake cobbler at 425 degrees for 20 min or possibly till biscuits are golden brown.
- Bake biscuits at 425 degrees for 12 to 15 min.
- Serve cobbler with ice cream, if you like.
- This recipe yields 6 to 8 servings.
