Calamari Steaks With Zesty Butter Sauce Recipe
- 5 c. flour
- 3 Tbsp. salt
- 3 Tbsp. freshly-grnd black pepper
- 12 lb calamari steaks or possibly fillets (48 four-ounce steaks)
- 36 x Large eggs lightly beaten
- 3/4 c. grated Parmesan cheese
- 3 Tbsp. Tabasco brand Pepper Sauce
- 3 Tbsp. lemon juice
- 3 Tbsp. Worcestershire sauce
- 3/4 c. extra virgin olive oil
- 3/4 c. clarified butter Zesty Butter Sauce (see recipe)
- In small hotel pan combine flour, salt and pepper.
- Dredge calamari steaks in flour mix.
- In separate small hotel pan mix Large eggs, cheese, Tabasco brand Pepper Sauce, lemon juice and Worcestershire sauce till smooth.
- Dip dredged steaks into egg mix to coat.
- Heat oil and butter in saute/fry pan.
- Add in steaks and cook 1 1/2 min per side till golden.
- This recipe yields 24 servings.
- Caution: Overcooking steaks will result in toughness and chewy texture.
