Holiday Banana Nut Bread Recipe
- 1 1/2 c. all-purpose flour
- 1 teaspoon baking soda
- 1 c. sugar
- 2 Large eggs, beaten
- 1/2 c. butter, melted
- 1 c. mashed ripe bananas
- 1 teaspoon vanilla extract
- 1/2 c. minced pecans
- 1/4 c. flaked coconut
- 1/4 c. raisins
- Combine first 3 ingredients; set aside.
- Combine Large eggs and next 3 ingredients in a large bowl; add in flour mix, stirring just till moistened.
- Mix in pecans, coconut and raisins.
- Pour batter into a greased and floured 8 1/2 x 4 1/2 x 3 inch loaf pan.
- Bake at 350 degrees for 1 hour or possibly till a wooden pick inserted in center comes out clean.
- Cold in pan 10 min; remove from pan and cold completely on a wire rack.
- Yield: 1 loaf.
