Black Bean Puree

  1. Sweat onions in olive oil until caramelized.
  2. Add garlic.
  3. Saute 30 seconds or until fragrant.
  4. Add black beans.
  5. Toss.
  6. Season.
  7. Add vinegar.
  8. Cook until nearly evaporated.
  9. Transfer to a food processor or use a stick blender.
  10. Add apple cider little by little to achieve desired consistency.
  11. Variations; White vinegar, cilantro, lime, smoked paprika, tequila, cumin, cayenne, jalapeno
