Double Cranberry Slaw
- 1 small head cabbage, shredded
- 4 -6 baby carrots, shredded
- 14 small onion, shredded
- 1 cup fresh cranberries, chopped
- 12 cup dried cranberries
- 12 cup walnuts
- 14 cup red wine vinegar
- 3 tablespoons honey
- 12 teaspoon salt (to taste)
- 14 teaspoon fresh ground pepper (to taste)
- splash of your favorite hot sauce, I used Cholulas
- 1 teaspoon orange zest
- 2 tablespoons orange juice
- Use a food processor to shred all the fresh veggies, or use a packaged mix.Place in a bowl.
- Pulse the dried cranberries & walnuts together in food processor a few times until ground but not a paste.
- Add this to the next 7 ingedients (the dressing) and pour over the veggies.
- Best if you let it sit in fridge several hours or overnight.
