Standard Sweet Potato Yokan

  1. Cut the sweet potatoes into 2 cm thick slices.
  2. Peel rather thickly and soak in water to get rid of the bitterness.
  3. Put Step 1 in a bowl and add enough water to cover.
  4. Boil until softened.
  5. You can also cook in a microwave.
  6. Once boiled, drain the moisture and mash while still hot.
  7. Put the powdered kanten, water, and sugar in a pot and bring to a boil.
  8. Add Step 3 and mix well.
  9. Knead over low heat for 2 minutes.
  10. Pour into a moistened container.
  11. Once cooled, put into the refrigerator to chill.
  12. When removing from the container, warm the container in a bit of lukewarm water to warm.
  13. Cut into your desired size and enjoy.
