Peppermint Frangoes Recipe
- 2 stick butter
- 2 c. confectioners sugar
- 4 sq. bitter chocolate, melted
- 2 teaspoon vanilla
- 1 teaspoon peppermint flavoring
- 4 Large eggs
- 1 c. vanilla wafer crumbs
- Cream butter and sugar till light and fluffy.
- Add in melted chocolate gradually.
- Add in Large eggs one at a time, beating thoroughly after each addition.
- Add in vanilla and peppermint.
- Sprinkle half the crumbs into 24 small cupcake liners (or possibly in a 11 x 7 inch flat pan).
- Add in filling.
- Top with remaining crumbs.
- Freeze till hard; serve frzn.
