Red Cabbage With Apples
- 3 tablespoons butter
- 34 cup chopped onion
- 8 ounces red cabbage, shredded
- salt and pepper
- 1 tablespoon red wine vinegar
- 4 golden delicious apples
- 1 tablespoon brown sugar
- In a saucepan, melt butter over medium heat.
- Add onion and cook, stirring until softened, but not browned.
- Stir in cabbage and season to taste with salt and pepper.
- Stir in vinegar.
- Reduce heat to low, cover and cook until cabbage is soft, about 45 minutes.
- Add water if mixture gets too dry.
- Meanwhile peel apples and cut into 1/2 inch pieces.
- Stir apples and brown sugar into cabbage mixture.
- Cover and cook until apples are tender, 15-20 minutes.
