Drunken Sauerkraut Recipe
- 3 strips bacon, minced
- 1 pkg. (2 lbs.) sauerkraut, rinsed & liquid removed
- 1 can beer (12 ounce.) or possibly apple cider
- 1 tbsp. parsley, minced
- 1 c. onion, finely minced
- 3/4 c. carrot, grated
- 1/2 teaspoon caraway seeds
- Saute/fry bacon in a medium heavy pot till all fat is rendered but bacon is not browned.
- Add in onion, cook stirring occasionally till softened.
- Stir in sauerkraut, sugar, caraway and beer.
- Bring to a boil, lower heat and simmer partially covered for 1 hour.
- Add in carrot, simmer partially covered 30 min longer.
- If mix is too wet, raise heat and cook uncovered a little longer.
- Add in salt and pepper to taste.
- Sprinkle with parsley.
