Drunken Sauerkraut Recipe

  1. Saute/fry bacon in a medium heavy pot till all fat is rendered but bacon is not browned.
  2. Add in onion, cook stirring occasionally till softened.
  3. Stir in sauerkraut, sugar, caraway and beer.
  4. Bring to a boil, lower heat and simmer partially covered for 1 hour.
  5. Add in carrot, simmer partially covered 30 min longer.
  6. If mix is too wet, raise heat and cook uncovered a little longer.
  7. Add in salt and pepper to taste.
  8. Sprinkle with parsley.
