Dried Apple and Cranberry Pie

  1. Cover dried apples with water.
  2. Soak 2 to 3 hours.
  3. Drain water, reserving 1 cup.
  4. In a saucepan, simmer soaked apples, 1 cup water, and cranberries until cranberries start to burst.
  5. Remove from heat; add sugar, raisins, cinnamon, orange peel, and the juice of 2 limes.
  6. Preheat oven to 400 degrees F.
  7. Prepare piecrust.
  8. Pour mixture into pie plate lined with lower crust.
  9. Cover with top crust.
  10. Bake pie for 1 hour.
  11. Measure and set aside 1/2 cup flour and 2 tablespoons butter.
  12. Rub the remaining butter into the flour.
  13. Stir in cold water with a fork.
  14. Roll dough out on well-floured board with a floured rolling pin, dot with 1 tablespoon reserved butter, and sprinkle 1 tablespoon reserved flour.
  15. Roll up the dough like a jelly roll.
  16. Flour lightly and roll to a 1/4 -inch thickness.
  17. Repeat the butter and flour addition procedure, using up all butter and flour.
  18. Divide dough in half and form into 2 discs, covering each with plastic wrap.
  19. Store in a cool place until needed.
