Vegetarian Burger with Sweet & Sour Sauce

  1. For the patties: Put a weight on the firm tofu to drain well.
  2. Lightly rinse the chick peas and mash with your fork.
  3. If you microwave them for a few seconds, they will be easy to mash.
  4. Finely chop the onion and garlic and fry them with a little oil.
  5. Mix 1, 2 and 3 together and add the sesame seeds, salt and pepper.
  6. Combine all them together with your hands as you do when you make meat patties.
  7. (If the texture is too firm, add some water and if too soft, add some panko.)
  8. Divide the mixture into 4 portions and shape into 4 burgers.
  9. Heat a little oil in a frying pan and fry the burgers on both sides until crispy (when you fry the first side, cover with a lid to steam-fry).
  10. Sweet & Sour: Put all the ingredients together in a sauce pan and bring it to the boil.
  11. To finish: Prepare the vegetables of your choice, slice or shred them up and place them on top of your tofu burger.
  12. Pour on the sauce and sandwich with the bun.
  13. It's also tasty if you spread a little tianmianjiang or hoi-sin sauce on the buns.
