Mexican Pork Steak Stew Recipe
- 2 tbsp. oil
- 2 pound pork steak
- 1 med. onion, minced
- 6 lg. potatoes
- 1 tbsp. chili pwdr
- Salt & pepper to taste
- Trim pork steak of fat and cut into 1 inch cubes.
- Peel potatoes and cut into 1 inch cubes.
- Heat oil and add in pork cubes first.
- Cook till browned.
- Remove and drain.
- Add in potatoes and onions to remaining oil and cook for about 5 min till lightly browned.
- Add in pork and the other ingredients and sufficient water to barely cover all ingredients in the pan.
- Cover and cook for about 30 min till broth is thickened and meat and potatoes are tender.
- Note: Serve with flour tortillas and refried beans if you like.
- Serves 3-4.
