Roasted Beet Dip

  1. Heat oven to 400 degrees F.
  2. Place beets on parchment-covered baking sheet.
  3. Bake 1-1/2 hours or until tender.
  4. Cool 10 min.
  5. Peel beets; cut each into chunks.
  6. Place in food processor.
  7. Add remaining ingredients; process until smooth.
