Tapioca Sensation
- 1/2 cup small pearl tapioca
- 1-1/2 cups boiling water
- 1 pkg. (4-serving size) JELL-O Raspberry Flavor Gelatin
- Prepare tapioca as directed on package; cool.
- Cover and refrigerate until ready to serve.
- Meanwhile, stir boiling water into gelatin in 8-inch square dish sprayed with cooking spray until gelatin is completely dissolved.
- Refrigerate 1 hour or until set.
- Cut gelatin into 8 (2-inch) cubes, then cut each cube into 12 smaller cubes.
- Spoon 1/4 cup of the tapioca into each of 8 parfait glasses; top each with 6 gelatin cubes.
- Repeat both layers.
- Serve immediately or cover and refrigerate until ready to serve.
