Toffee Pie
- Ingredients for the Crust
- 1 cup granola
- 1 Tbsp. sugar
- 2 Tbsp. chopped toasted PLANTERS Almonds
- 1 Tbsp. honey
- 1 Tbsp. ground cinnamon
- 1/4 cup (1/2 stick) unsalted butter, melted
- Ingredients for the Pie
- 1 tub (7 oz.) BAKER'S Dark Semi-Sweet Dipping Chocolate
- 1/4 cup (1/2 stick) unsalted butter
- 1 lb. dulce de leche (sweetened milk caramel)
- 2 Tbsp. thawed COOL WHIP Whipped Topping
- 1 Tbsp. PLANTERS Sliced Almonds, toasted (for garnish)
- 5 strawberries (for garnish) Safeway 1 lb For $3.99 thru 02/09
- Preparation Granola Base Heat oven to 350F.
- In a food processor grind half the granola with sugar, nuts, honey and cinnamon until smooth.
- Add the melted butter over and pulse a few seconds.
- Finally, add remaining granola and blend a few seconds until the mixture is smooth.
- Place mixture into an 8-inch pie pan, pressing well into bottom and up the side to make it compact.
- Place in the refrigerator for 15 min.
- to firm up.
- Bake 10 min.
- or until golden.
- Remove from oven and let cool completely on a wire rack.
- Preparing the Toffee Pie Place the chocolate in a double boiler to melt with the butter.
- Stir until the mixture is homogeneous and both ingredients are completely melted.
- (About 10 minutes maximum)
- Place the caramel on the base of granola.
- On the layer of caramel, cover with melted chocolate.
- Let cool to room temperature and then put into refrigerator.
- Refrigerate harden the chocolate, about 2 hours.
- Garnish with cream, almonds and strawberries (optional) Serve and enjoy!
