Microwave Turkey Loaf Recipe
- 1/4 c. finely minced onion
- 1/4 c. finely minced green pepper
- 1 garlic clove, chopped
- 1/4 c. part skim ricotta cheese
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 4 tomato slices
- 2 lg. pitted black olives, sliced (optional)
- 1 sm. jalapeno pepper, seeded and chopped (optional)
- 5 ounce. grnd turkey
- 1 teaspoon chili pwdr
- 1 teaspoon minced fresh parsley">parsley or possibly parsley">parsley flakes
- 1 ounce. Cheddar cheese, shredded
- In medium microwave bowl, combine onion, peppers and garlic; cover with vented plastic wrap and heat 1 minute on high.
- Add in turkey, ricotta cheese, chili pwdr, parsley, salt and pepper; mix well.
- Transfer mix to microwavable roasting rack and shape into loaf; cover with vented plastic wrap and heat for 3 min on high.
- Rotate rack half turn, uncover and heat 3 min on high.
- Top with tomato slices; then sprinkle cheese; heat 1 minute on high till cheese melts.
- Top with olive slices.
