Longaneza Breakfast skillet
- 1 lb longaneza broken up in to pieces
- 1 chayote cut up into small chunks
- 1/2 onion sliced
- 6 mushrooms sliced
- 2 jalapenos sliced
- 10 eggs cracked in a bowl
- 1 salt to taste
- 1 tbsp cooking oil
- In large skillet heat oil then add longaneza.
- When longaneza is cooked thoroughly and is starting to crisp add all the listed veggies.
- When all the veggies are fork tender especially the chayote then add the eggs.
- Stir occasionally until eggs are cooked and fluffy , add salt to taste.
- Keep in mind that the longaneza already has salt added.
- Serve with refried beans and some fresh avacado.
