Southwestern Potato Salad Recipe
- 3 Tbsp. extra virgin olive oil
- juice of 1 lime
- 2 Tbsp. vinegar
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. sugar
- 1/2 tsp. cumin
- 1 1/2 lbs. red skinned potatoes
- 2 Tbsp. minced fresh cilantro
- 1/2 c. minced red pepper
- 1/2 c. minced green pepper
- 1/2 c. minced celery
- 1/2 c. minced onion
- 1 can black beans
- 1 can yellow kernel corn
- Boil potatoes till just done.
- Don't over cook.
- Cold, peel and cut into cubes.
- Combine potatoes, and remaining vegetables.
- Combine oil, vinegar, lime juice, and spices.
- Pour over vegetables and toss.
- Chill.
- Make 6-8 servings.
