Hummus bi Tehini ( chickpeas with Tehina paste)
- 250 grams chickpeas
- 2 clove Garlic
- 2 medium Lemons
- 2 tsp Salt
- 1 cup Tehina paste
- Soak chickpeas overnight into a large deep bowl covered with plenty of water.
- Drain and rinse chickpeas
- Put in a saucepan and cover with fresh cold water
- Bring to boil, gently simmer them for around 30 to 45 minutes until tender
- if the chickpeas became dry during boiling process , add more water.
- ( important not to get dry)
- Drain the contents of the pan but keep some of the liquid.
- keep a dozen of chickpeas for garnishing
- In a wooden mortar, Crash the garlic cloves with a bit of salt
- Squeeze the lemons keep juice on the side.
- shake well the Tehina paste .
- Now in a food processor, put the drained chickpeas, the crashed garlic, the lemon juice , the Tehina paste and add salt
- Blend the whole to a smooth puree
- You can add extra lemon juice , garlic, salt or Tehina paste as per your taste.
- Try to get the consistency of a thick mayonnaise.
- When serving , garnish with the extra whole chickpeas that you left on the side.
- Add Some chopped parsley, red paprika powder and top it up with olive oil.
