Diabetic Coconut Fruit Cookies

  1. Preheat oven to 400F (200C).
  2. Combine flour, baking powder, baking soda, and salt, cut in margarine until consistency of peas.
  3. Stir in coconut add remaining ingredients all at once.
  4. Stir with fork until dough holds together.
  5. Drop about 2 inches apart by teaspoons onto an ungreased cookie sheet.
  6. Bake until golden brown.
