Great Pumpkin Cookie Recipe

  1. Preheat oven to 350 degrees.
  2. Combine flour, oats, baking soda, cinnamon and salt.
  3. Cream butter; gradually add in sugars, beating till light and fluffy.
  4. Add in egg and vanilla; mix well.
  5. Alternate additions of dry ingredients and pumpkin, mixing well after each addition.
  6. Stir in morsels.
  7. For each cookie, drop 1/4 c. dough onto lightly greased cookie sheet.
  8. Spread into pumpkin shape, using a thin metal spatula.
  9. Add in a bit more dough to create stem.
  10. Bake 20 to 25 min until cookies are hard and lightly browned.
  11. Remove from cookie sheets; cool on racks.
  12. Decorate, using icing or peanut butter to affix assorted candies, raisins or nuts.
  13. VARIATION: Substitute 1 c. raisins for morsels.
