Curried Squashy Apples & Leeks
- 2 tablespoons butter
- 2 cups leeks, chopped
- 3 cups apples, peeled, cored & diced small
- 1 lb butternut squash, diced small (fresh or frozen)
- 1 cup apple cider
- 2 tablespoons curry powder
- salt & pepper
- In a small pan, saute leeks in butter until softened then add to crockpot.
- Add remaining ingredients to crockpot & stir.
- Cook 1 1/2 - 2 hours on high until bubbly & the apples are softened.
- Taste to check for seasoning.
- Add salt & pepper to taste.
