Vickys Scottish Potato Salad

  1. Dice the potatoes and boil in salted water for 10 minutes until tender, then drain and pat dry
  2. Simmer the peas in another pan for 5 minutes or until cooked
  3. While the peas and potatoes are still warm, mix them together gently in a bowl with the chopped beets, onion and parsley
  4. Fold in the salad dressing and season to taste
  5. This is a traditional Scottish accompaninent to oatmeal coated herring
