Onion Soup

  1. In heavy pan, saute the onions in butter, stirring occasionally, until golden.
  2. Sprinkle with flour and stir for a few minutes to cook the flour.
  3. Season with salt and pepper.
  4. Add broth, stirring constantly.
  5. Bring to a boil, then lower heat and simmer, partially covered, for 30 minutes.
  6. Toast the bread in oven and place them in a large ovenproof soup tureen or individual bowls.
  7. Sprinkle toast with Parmesan cheese.
  8. Ladle soup in bowls on top of bread and top with grated cheese.
  9. Broil until cheese is bubbling and serve.
