Veggie Salad
- 1 avocado, chopped
- 1 tablespoon lemon juice
- 1 (14 ounce) can artichoke quarters in water, drained
- 2 (14 ounce) cans garbanzo beans, drained
- 1 cucumber, sliced
- 1 tomatoes, chopped
- 1 yellow bell pepper, chopped
- 1 head romaine lettuce, shredded into bite-size pieces
- 1 cup fat free cheese, shredded
- 4 ounces fat-free Italian salad dressing
- Sprinkle lemon juice over avocado.
- Toss together all ingredients.
- Chill for several hours or overnight.
