Groom's Chocolate Biscuit Cake
- 2 pkg. (170 g each) Baker's Premium 70% Cacao Dark Chocolate, divided
- 1/4 cup butter
- 1/2 cup sugar
- 1 egg
- 45 Mr. Christies Social Tea Biscuits, broken into 1/2-inch pieces
- Line bottom of 7-inch springform pan with parchment; spray with cooking spray.
- Microwave 4 oz.
- chocolate and butter in medium microwaveable bowl on MEDIUM 1-1/2 min.
- or until butter is melted; stir until chocolate is completely melted.
- Add sugar and egg; mix well.
- Stir in biscuit pieces; spoon into prepared pan.
- Press firmly into pan with back of spatula.
- Refrigerate 3 hours or until firm.
- Run spatula around rim of cake to loosen; remove rim.
- Invert cake onto wire rack placed over parchment-covered baking sheet.
- Remove bottom of pan and parchment.
- Microwave remaining oz.
- chocolate in microwaveable bowl 2 min.
- or until completely melted, stirring after each minute.
- Slowly pour over cake; smooth top and side with spatula.
- Let stand 1 hour.
- Transfer cake to plate before serving.
