Rice crispy rubble chicken recipe
- 100 g (3.5oz) crispy rice cereal
- 0.5 tsp paprika
- 0.5 tsp ground cumin
- 0.5 tsp dried thyme
- 1 garlic clove, crushed
- 1 squeeze of lemon juice
- 200 ml (7fl oz) mayonnaise
- 4 skinless, boneless chicken breasts, cut into thick strips
- Preheat the oven to 200C/gas mark 6 and line a shallow baking sheet with baking parchment.
- Put the cereal in a food bag and crush roughly.
- Now add the paprika, cumin, thyme and salt and mix well.
- Pour onto a plate.
- Mix together the garlic, lemon juice and mayonnaise in a separate bowl.
- Coat the chicken strips in a thin layer of the mayonnaise mix.
- Toss them in the cereal mix and put on the baking sheet one at a time.
- Bake for 1520 minutes until golden, turning half way through cooking.
- Serve with a dollop of tomato ketchup, recklessness and napkins and dont even attempt any healthy side-dish token gestures.
