Homemade Zucchini Bread Recipe
- 3 Large eggs
- 2 c. sugar
- 2 c. zucchini, shredded
- 1 c. veg. oil
- 2 teaspoon vanilla
- 3 c. flour
- 1 teaspoon salt
- 1 teaspoon soda
- 1 teaspoon baking pwdr
- 2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/2 c. minced nuts
- 1/2 c. raisins, optional
- Beat Large eggs till foamy.
- Stir in sugar, zucchini, oil, and vanilla.
- Gradually add in dry ingredients and spices.. Stir in nuts.
- Pour into bread pans that have been greased only on the bottom.
- Bake at 325 degrees for 60 to 80 min.
- Cold 10 min.
- Remove from pans and cold completely.
- May be used as bread or possibly frosted and served as cake.
- Makes 2 loaves.
