Mandys Irish lasagna
- 500 grams minced beef
- 500 ml passatta
- 3 clove garlic
- 1 large onion, chopped
- 1 red bell pepper small diced
- 1 large carrot chopped
- 1 tbsp balsamic vinegar
- 1 tbsp dried oregano
- 1 tbsp dried basil
- 1 salt n pepper to taste
- 250 ml water to cover meat and veg
- 25 grams butter
- 25 grams flour
- 150 ml milk
- 1 salt n pepper to taste( i also added a pinch of dried parsley for colour)
- 1/2 cup grated cheese( chedder mozzerella mix)
- 1 box lasagna sheets ( no pre cook type)
- 1 cup grated cheese for topping
- To make meat sauce ,Brown mince until fully cooked and drain off excess fat except for one tablespoons
- Chop all veg ,and add to meat saute for 2 minutes,then add dried herbs and all the liquids and salt n pepper ,bring to a boil and simmer for 30 minutes until veg is cooked and sauce is reduced,Allow to cool.
- In another pot melt butter do not let it Brown, then add flour and mix well allow to cook for 2 minutes to cook out the flour taste .
- Add milk to butter and flour mix ,mix well to avoid lumps ,season with salt n pepper and then add 1/2 cup of grated cheese .Allow to cool
- To make lasagna put a ladle of meat sauce into a oven proof dish( 9 by 9 inch) ,then cover with lasagna sheets ,top with a ladle of cheese sauce ,repeat until all mixes are used finishing with the cheese sauce, top with 1 cup grated cheese
- Put in a preheated oven at 350 covered with foil for the 30 minutes ,then remove foil and finish browning the lasagna for a further 15-20 minutes depending on Ur oven
- Onced cooked remove from oven and allow it to rest for at least 10 minutes before slicing and serving.Enjoy
