Pumpkin Spice Cup Cakes
- 1 packages yellow cake mix
- 1 packages (4-serving size) vanilla instant pudding mix
- 1 cup canned pumpkin
- 1/2 cup oil
- 1/2 cup water
- 3 eggs
- 1 1/2 tsp ground cinnamon
- 1 tsp ground cloves
- 1 tsp pure vanilla extract
- 1 packages (8 oz) cream cheese, softened
- 1/4 cup butter, softened
- 1 tsp pure vanilla extract
- 1/4 tsp ground cloves
- 1 box (16 oz) confectioner's sugar
- Cupcakes: 1.
- Beat all cupcake ingredients with electric mixer on low speed just until moistened.
- Beat on medium speed 2 minutes.
- Spoon batter into 24 paper-lined muffin cups, filling each cup 2/3 full.
- Frosting: 1.
- Beat all frosting ingredients (except confectioner's sugar) until light and fluffy.
- Gradually beat in confectioner's sugar until smooth.
