Fettucine Alfredo Make-Over
- 8 oz. uncooked fettuccine
- 1/3 cup margarine
- butter
- 1-1/2 tsp. flour
- 1/4 tsp. white
- black pepper
- 1/8 to 1/4 tsp. nutmeg (optional)
- 1/2 cup half and half
- 1/2 cup freshly grated Parmesan cheese
- 1 tbsp. chopped fresh parsley (optional)
- Cook fettuccine as desired.
- Drain; keep warm.
- Melt margarine in large skillet over low heat; stir in flour, pepper and nutmeg.
- Gradually stir in half & half.
- Cook on low heat 5 minutes or until mixture thickens slightly, stirring frequently.
- Stir in cheese and cook just until cheese is melted, stirring constantly.
- Immediately stir in cooked fettuccine; toss to coat with sauce.
- Sprinkle with parsley; serve immediately.
