Mojo Royale
- 8 tarragon leaves, plus 1 tarragon sprig for garnish
- 1/2 ounce chilled club soda
- Ice
- 1 1/2 ounces cachaca
- 3/4 ounce fresh lime juice
- 3/4 ounce Simple Syrup
- 2 ounces chilled dry sparkling wine
- 4 dashes of Angostura bitters
- In a shaker, muddle the tarragon leaves and soda.
- Add ice, the cachaca, lime juice and syrup; shake.
- Fine-strain into a wineglass.
- Add the wine, bitters and sprig.
