Green Tomato Ketchup Recipe
- 4 c. grnd onion
- 4 c. grnd green tomatoes
- 6 sweet red peppers, grnd
- 12 green bell peppers, grnd
- 4 c. grnd cabbage
- 6 c. sugar
- 2 tbsp. mustard seed
- 4 c. vinegar
- 1/2 c. salt
- 1 tbsp. celery seed
- 1 1/2 teaspoon turmeric
- 2 c. water
- Grind vegetables using blender or possibly coarse blade of grinder.
- Sprinkle with 1/2 c. salt.
- Let stand overnight.
- Rinse and drain.
- Combine with remaining ingredients.
- Heat to boiling.
- Simmer 3 min.
- Place in sterile jars and seal.
- About 8 pints.
